NEISD Recipe Release: Pork Carnitas Street Tacos

Pork Carnitas Street Tacos are a hit across North East ISD middle and high school campuses. Let chef Alissa Hitt walk you through the recipe so you can recreate this crowd pleaser in your kitchen. 

Ingredients: Pork carnitas (or your choice of protein), corn tortillas, cilantro, cabbage and lime. 

Step 1: Warm up your tortillas in the oven. 

Step 2: Chop your cabbage and cilantro, then place in a large mixing bowl. Mix with one and a half (1.5) tablespoons of lime juice. Toss well. 

Step 3: Take tortillas out of the oven. Add pork carnitas/protein and top with coleslaw mix. 

NEISD cafeteria can serve 35 students with five pounds of pork carnitas and 70 corn tortillas with two tacos per serving. For crunch coleslaw, use 10 ounces of cabbage, 1/3 cup of shredded cilantro and 1.5 tablespoons of lime juice. 

Each taco consists of a corn tortilla, 1.15 ounces of protein (close to 1/4 cup) and 1/8 cup of crunch slaw.
