From harvest to lunch tray #theNEISDway

Hardy Oak students and PTA members harvest the garden

Spinach, kale, radishes, beets, snap peas, herbs and even marigolds were on the menu for a very special taste test at Hardy Oak Elementary School. 

Students recently harvested a variety of fresh vegetables from the school garden. Today, North East ISD Chef and Culinary Development Coordinator Taylor Thompson joined the Hardy Oak kitchen to prepare a Fall Harvest Salad for students to try at no cost to them. Chef Thompson even made up a special vinaigrette dressing with fresh herbs from the garden. 

Students helped plant seeds in October and tended to them as they grew all semester. 

“They’re so used to seeing this on a tray or at H-E-B and not realizing what’s going on behind the scenes,” said Hardy Oak parent Amy Burroughs. “Now they’re getting to see the magic.” 

Students didn’t just see the magic of harvesting the school garden – they tasted it too. Thank you to the Hardy Oak PTA for making the school garden a thriving space for learning and healthy habits #theNEISDway
